Honey Pilsner Redux

Decided that my biggest success so far with the ol’ home brewin’ has been my Honey Pilsner.  Last time I made it I used Black Rock Pilsner (the blue can, not the export version) and about 1kg of honey (off the shelf Pams “generic” honey) topped up with a bit of Dextrose.  I invested in a lager yeast, then went right ahead and used the packet yeast as well.  Was a bit worried about overdoing the yeast but it turned out pretty awesome.  So this time… I’m doing it better (I hope!!)

So what’s the mix this time?

  • Black Rock Pilsner
  • 1.7kg Arataki Rewarewa honey (bought 2kg and kept a bit for toast!)
  • Brewmaster Lager Yeast (coz the chemist was out of the good stuff)
  • Copper Tun Saaz Finishing Hops

So a couple of changes to the recipe.  More (and better quality) honey, a different yeast (not that I planned it that way) and a bit of fancy by adding a bit of extra bagged hoppage.

So far it’s looking good – early days though!  OG was 1.058 so it’s shaping up for about 6.5% – 7.5% all going well.  Taster should be ready 4 October 2011, general consumption ready 8 November 2011.

As for previous projects?  I nearly dumped my German-styled Bock (think something like Speights Old Dark) when my sample contained some growy green stuff.  Realised – thankfully not too late – that this was just in the tap, so syphon filled my bottles this time round.  Bock is due for tasting 11 Sept 2011, ready for general consumption 16 Oct 2011.
